Planetary Health Diet
Food production is responsible for more than one-third of the planet’s greenhouse gas emissions and 70% of its freshwater use. Some foods have larger carbon footprints than others – for example, producing 100 grams of beef emits nearly 50 kilograms of greenhouse gases, while producing the same weight of tofu emits only 1.98 kilograms of greenhouse gases – so eating less meat is one of the best ways to help reduce the threat of climate change. If everyone in the U.S. ate a quarter less meat and replaced it with plant-based protein, we would reduce greenhouse gas emissions by about 82 million tons per year, according to the study.
